Sesame Encrusted Soy Marinated Tuna Toasts
1 pound sushi grade tuna
freshly toasted black sesame seeds
3/4 cup soy sauce
1/8 cup finely chopped pickled ginger
scallions, fine slivers
finely diced red pepper
wasabi
12 oblique cut baguette slices, very lightly oven toasted
Soak the entire piece of fish in soy sauce and ginger and for several hours. Remove, pat dry, and press sesame into fish. Sear fish for 1-2 minutes each side. Slice with precision and drape over toast. Carefully place a dab of wasabi on each piece. Attractively garnish with scallion and red pepper.
