Broiled Medley of Fancy Oysters/Clams...(Rockefeller, Casino, Barbecue)
Shuck and loosen a couple dozens clams and oysters.
Rockefeller
fresh sauteed spinach
grated hard Italian cheese
butter
pepper
Lay spinach over oyster, filling shell to edges. Sprinkle plenty of cheese and a small patty of butter, and crack some pepper.
Casino
crumbled bacon
red and green pepper, finely diced
onion, finely diced
baguette bread crumb pieces
butter
pepper
Layer bread crumbs, bacon, onion, and peppers over clam. Place a small dollop of butter, and crack some pepper.
Barbecue
3 Tbs tomato paste
2 Tbs brown sugar
2 Tbs malt vinegar
1 Tbs mustard powder
big splash worchestire sauce
¼ cup finely diced onions
couple shakes of liquid smoke
dash of Tabasco
2 Tbs olive oil
¼ cup water
garlic powder
chipolte pepper powder
salt/pepper
crumbled bacon
Mix ingredients in blender until nicely blended, add more tomato paste or water as needed, adjust seasonings to taste.
(or, skip and use your favorite brand of barbecue sauce)
Place a teaspoon or so of the barbecue sauce over over each clam and oyster, add a bit of bacon.
Place your clams and oysters in the broiler for about 5 minutes, or until Rockefeller cheese has slightly browned, or the same in your closed grill. Serve with wedges of lemon.
