Seared/Grilled Chicken with Bistro Style Balsamic Tomatoes and Red Onions
4 chicken breast fillets, lightly pounded
2 cups chopped plum tomatoes
1 cup roughly chopped red onions
½ cup aged balsamic vinegar
2 Tbs olive oil
salt/pepper
chopped fresh herbs of choice
Sear or grill chicken breasts. In bowl, toss tomatoes, onions, vinegar, vinegar, oil, herbs, salt/pepper.
Smother chicken with the tomato salad. Serve with grilled squashes or asparagus.
